Bind the 3 bottom sides of the henhouse after it's quilted, then face the the roof leaving the bottom edge open. Turn it right-side-out and either hand or machine stitch the roof to the house. I find binding ...I like the fabric you put on top. I find binding sharp corners not that difficult. Maybe you could have a try on an odd shape of scraps and see wether you are happy with it. Or sew the whole quilt like an enveloppe with a hole to turn it around and then sew 1/4 inch from the border all around as a binding ersatz. I hope I could help you there.
