I think I would go for black for the border, or maybe a black with some burgundy in it? Just bundle up the extra quilt and backing while you quilt the centre, staying away from the edges of the batting. Then add the side sections of batting one at a time. Or maybe something inserted on one side of the border?<br /><br />I was making a cat quilt, and ran out of long border lengths. I REALLY didn't want to piece in some little bits I had, to make it long enough...
