Fennel-Flecked Potato Samosas

Filled and drying a bit before deep frying.

On the plate with cucumber riata and cucumbers soaked in vinegar.

Here is the delicious potato filling. The recipe can be found in Mangoes and Curry Leaves by Jeffrey Alford and Naomi Duguid, my favorite cookbook authors. This book consists of recipes from India, Pakistan, Sri Lanka, Bangladesh, etc.

Yum! Love samosas!

Although when I first read the title of the post, I wondered why anyone would make Flannel Flecked Samosas. Sometimes my mind goes to very strange places. LOL
